Try Your Hand At Making Gumbo

Are you looking for a delicious gumbo recipe that your whole family can enjoy? Try this gumbo recipe and you won’t regret it. You can even add in your own personal touches to make it unique to your family.

Ingredients

  • 2 garlic cloves, minced
  • 1 red bell pepper, coarsely chopped
  • 2 teaspoons Cajun seasoning
  • 1/2 cup peanut oil
  • 1 large onion, coarsely chopped
  • 1 cup thinly sliced celery
  • 1 pound andouille sausage, cut into 1/4-inch-thick slices
  • 1 (48-oz.) container chicken broth
  • 1/2 cup peanut oil
  • 3/4 cup all-purpose flour
  • 2 pounds skinned and boned chicken breasts

  • 1/8 teaspoon ground red pepper (optional)

  • Toppings: chopped fresh parsley, cooked and crumbled bacon, hot sauce

Directions

Start by cooking your 1/4-inch-thick slices of sausage for 7 minutes over medium in a large skillet. Once the sausages are browned, remove and drain them before patting them dry with a paper towel.

Next, over medium heat in a stainless-steel Dutch oven heat your 1/2 cup of peanut oil. Then whisk in flour. Cook for 18 to 20 minutes while constantly whisking. Once it’s reached a caramel-color reduce the heat to low and continue to whisk until the mixture is milk chocolate-colored and texture is smooth.

Now you can increase the heat to medium and stir in onion, bell pepper, celery, garlic, and Cajun seasoning. You can also add the optional red pepper at this time. Stir for 3 minutes, then gradually add the chicken broth, after that you can add the sausage and chicken. You can increase the heat again to medium-high and bring your mixture to a boil.

Reduce heat to low and stir occasionally while it simmers for an hour and 30 minutes or until the chicken is done. Then shred the chicken into large pieces.

Spoon gumbo oven roasted potatoes and add your choice of toppings.
