 Ingredients for the Gnocchi

  • 2 medium-sized Sweet Potatoes
  • 1/4 cup of Ricotta
  • 1 large egg
  • 1/2 cup of whole wheat flour
  • 1 1/2 cups of all-purpose flour
  • 2 tablespoons of maple syrup
  • 1/2 teaspoon of sweet paprika
  • 1/2 teaspoon of kosher salt
  • 1/4 teaspoon of freshly ground black pepper
  • A pinch of freshly grated nutmeg

Ingredients for the Maple Bacon Sauce

  • 2 slices of thick-cut bacon, diced
  • 1/4 cup of maple syrup
  • 2 tablespoons of butter
  • 1/2 teaspoon of smoked paprika

To begin this dish, you will need to thoroughly cook the sweet potatoes. Be sure to wash and dry them prior to baking them in the oven. You may also opt to cook them in the microwave. Once the sweet potatoes have cooked and cooled down for you to touch, you will cut them in half and scoop out the insides. Thoroughly mash the sweet potatoes with a fork.

You will then combine the mashed sweet potatoes, ricotta, syrup, egg, paprika, nutmeg, salt, and pepper in a large bowl. Once that mixture is smooth, you will gradually add both the whole wheat flour and all-purpose flour. As you mix and fold, a soft dough will form. Cover and chill the dough for 30 minutes or even overnight.

Once the dough has properly chilled you will divide it into 4 pieces, which you will roll into a long rope. The ropes should then be cut into 1-inch pieces. Place the pieces onto a floured baking sheet.

You will then cook the gnocchi in batches in a pot of boiling water. Be sure that the water that is boiling has salt. The gnocchi will cook for 2 to 3 minutes or until it floats.
